After plenty of (delicious) trial and error, we've perfected what might just be the ultimate cinnamon honey cookie recipe. Soft, chewy centres with slightly crispy edges, packed with warming spice, and that unmistakable sweetness only real honey can bring. The best part? Our Honey with Cinnamon does all the flavour work for you - no need to measure out multiple spices or worry about getting the balance right.

Why This Recipe Works

The secret to these cookies lies in a few key techniques:

Browning the butter - This adds a gorgeous nutty depth to the cookies that complements the honey beautifully. Don't skip this step!

Using real honey - Our Honey with Cinnamon brings natural sweetness and moisture, keeping these cookies soft and chewy for days (if they last that long!).

Not overbaking - The difference between good cookies and great cookies is knowing when to take them out. We want golden edges but still-soft centres.

What You'll Need

Ingredients:

  • 115g butter
  • 150g sugar
  • 3 tablespoons Happy Valley Honey with Cinnamon
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon (optional - our honey already has plenty!)
  • 280g plain flour

Equipment:

  • Small saucepan
  • Mixing bowls
  • Baking sheets
  • Parchment paper or silicone baking mats
  • Fork (for that classic cookie pattern)
  • Wire cooling rack

Step-by-Step Method

Step 1: Prepare Your Oven & Baking Sheets

Preheat your oven to 175°C/Gas Mark 4. Line your baking sheets with parchment paper or silicone mats - this prevents sticking and makes cleanup a breeze!

Step 2: Brown the Butter

Place the butter in a small saucepan over medium-low heat. Let it melt and continue cooking, swirling the pan occasionally. You'll notice it start to foam, then the milk solids will begin to turn golden brown. Once you can smell that gorgeous nutty aroma and see golden-brown specks at the bottom of the pan, remove it from the heat immediately. This should take about 5-7 minutes.

Top tip: Keep a close eye on it! Browned butter can quickly become burnt butter.

Step 3: Create Your Honey Mixture

Add the sugar and our Honey with Cinnamon to the browned butter. Return to low heat and stir gently until the sugar has melted and everything is well combined. This creates a beautiful, glossy base for your cookies.

Remove from heat and let this mixture cool to room temperature. This is important - if it's too hot when you add the eggs, you'll end up with scrambled eggs rather than cookie dough!

Step 4: Mix Your Wet Ingredients

Once your honey mixture has cooled, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, salt, baking soda, and additional cinnamon if you're using it (though our Honey with Cinnamon already brings plenty of spice!).

Step 5: Add the Flour

Gradually fold in the flour, adding it in two or three batches. Stir gently until just combined - overmixing can lead to tough cookies. Your dough should be thick and slightly sticky.

Step 6: Shape Your Cookies

Drop rounded teaspoonfuls of dough onto your prepared baking sheets, spacing them about 2 inches apart. They'll spread slightly as they bake, so give them room to breathe.

For that classic cookie look, gently press the top of each cookie with a fork to create a crisscross pattern. This is optional but looks lovely!

Step 7: Bake to Perfection

Bake in your preheated oven for 8-9 minutes. Yes, really - just 8-9 minutes! They might look slightly underdone when you take them out, but they'll continue cooking on the hot baking sheet. You're looking for lightly golden edges with centres that still look soft.

Step 8: Cool & Enjoy

Let the cookies cool on the baking sheet for 5 minutes (this helps them set), then transfer to a wire rack to cool completely. (Or, if you're like us, sneak one while it's still warm with a cuppa...)

Storage Tips

Store your cookies in an airtight container at room temperature for up to a week (though we doubt they'll last that long!). The honey keeps them beautifully moist.

You can also freeze the baked cookies for up to 3 months, or freeze the raw cookie dough balls and bake fresh cookies whenever the craving strikes. Just add an extra minute or two to the baking time if baking from frozen.
